
Nothing beats a delicious homecooked meal. Something warm to fill you up is sometimes just what you need after a long day! But, the thought of all the cleanup can make cooking seem off-putting. No one wants to spend hours cooking only to spend the rest of the evening cleaning the mess. Cooking dinner after working all day shouldn’t be a difficult task, and with these easy one-pot meals it won’t be!
One-Pot Pasta
This creamy cheese pasta combines spinach and goat cheese into a delicious meal everyone will love.
- 1 cup of penne pasta
- 4 spring onions, chopped
- 1 garlic clove, crushed
- 3/4 cup of soft goat’s cheese
- 1/4 cup of parmesan, finely grated, plus extra to serve
- 2 cups of vegetable stock
- 1/2 cup of spinach, chopped
Put pasta, spring onions, garlic, goat cheese, parmesan, and vegetable stock into a large pan. Simmer for 10-15 minutes, stirring occasionally. Mix in spinach until it wilts. Serve with extra parmesan sprinkled on top.

One-Pot Sausage
Try something different with this protein-packed dish.
- olive oil
- 8 pork sausages
- 9 slices of bacon, chopped
- 1 large red onion, finely chopped
- 1 cup of kale, leaves stripped and torn into pieces, stems finely chopped
- 4 cloves of garlic, chopped
- 2 tbsp of tomato purée
- 1 cup of red wine
- 3/4 cup of red lentils
- 2 cups of chicken stock
- 1.5 cups of cherry tomatoes
- a small bunch of flat-leaf parsley, chopped
- 3 tbsps of extra-virgin olive oil
- 1 lemon, zested and ½ juiced
Add olive oil to a large casserole and heat on medium-high. Brown sausage, remove, and set aside. Add bacon to the casserole and fry until crispy. Add onion and kale with a pinch of salt. Cook until soft, 5-10 minutes. Add garlic and cook for another minute. Stir in tomato purée and cook for another minute before adding in the red wine. Simmer until reduced by half. Mix in lentils, chicken stock, cherry tomatoes, and sausages. Simmer for another 45 minutes until lentils are cooked. In a small bowl mix extra-virgin olive oil, parsley, and lemon zest and juice to make a gremolata. Serve the sausage and kale mixture in a bowl with gremolata drizzled on top.
These one-pot meals are perfect to serve the whole family with fewer dishes to clean afterward. You can spend more time relaxing after dinner instead of cleaning up a mess!
